Mikal 'Mak' Giancola, DrPH, MPH, Owner
Hi, I'm Dr. Mak! Thanks for your interest in Dr. Mak's Superfoods. Dr. Mak's Superfoods is where my passion for flavors and my expertise in public health and food intersect. My masters and doctorate degrees are in public health, and I have spent my career working in infectious and chronic disease (cancer and obesity prevention), and my dissertation research focused on food systems. After an unfortunately short tenure at the USDA (I got DOGED) decided to blend my passion for health and and food into my first product- overnight oat/oatmeal.
My mission, and the mission of Dr. Mak's Superfoods LLC is to create a brand that offers reliably healthy foods that are also delicious.
In Spring of 2026, a farmers market customer, who happened to be a nutritionist, showed interest in the the overnight oat blends, and also began recommending them to her clients. While my own background provided expertise on population health, I knew the practical expertise of a nutritionist would fill important gaps for customers. In summer 2026, Dr. Mak's Superfoods LLC contracted with Maggie and we began working together. Maggie Gartman, MS, RDN, IFNCP lives in Asheville NC and her practice is called Dragonfly Nutrition Therapy, LLC. She has numerous areas of expertise, and I encourage you to visit her website!

Integrative & Functional Registered Dietitian | Food-as-Medicine Consultant
Maggie Gartman is an Integrative and Functional Registered Dietitian who works with individuals, families, and community based food businesses, farms, and value-added producers to improve health through the power of whole foods.
In her clinical practice, Maggie uses a personalized, root-cause approach to help clients better understand the connections among nutrition, lifestyle, and their health. She specializes in gut, metabolic, and inflammatory conditions, with additional interests in brain health, healthy aging, and longevity. Her approach combines evidence-based nutrition with practical strategies that fit each client's needs, preferences, and everyday life.
Alongside her clinical work, Maggie partners with food businesses and producers to develop organic products and educational resources that are nutritious, practical, and responsive to evolving consumer needs. She is especially passionate about supporting local and regional food systems and helping mission-driven producers communicate the nutritional value of their products with clarity and credibility. Her consulting services include food-as-medicine product audits, nutrition analysis, product-development collaboration, and consumer-facing nutrition education content. Her clinical experience allows her to evaluate products through both a nutrition-science lens and an understanding of how people select, prepare, and use food in the real world.
Maggie has served patients, families, and communities in the field of functional nutrition since 2020. She holds degrees in Exercise and Sport Science from UNC–Chapel Hill, as well as a Master of Science in Nutrition from Appalachian State University. She has also completed advanced training through the Integrative and Functional Nutrition Academy.
Outside of work, Maggie spends as much time outdoors as possible. She and her family are avid gardeners with dreams of building a homestead. Most weekends, you can find her at the yoga studio, exploring the Blue Ridge Mountains, or experimenting in the kitchen with fresh, seasonal foods. She is also passionate about volunteering and contributing to community food systems and nutrition programs.
